Originally intended to be coconut granola (PBFingers original), I took the base of this recipe and transformed it into what tastes eerily similar to chocolate chip cookies. I like my granola a little crispy, so it really tastes like a crunchy cookie. Eat this alone or on top of some yogurt.
Ingredients:
- 1 c. old fashioned oats
- 1 1/2 tbsp. + 1/2 tsp. coconut oil
- 2 tbsp. honey
- 1/2 – 3/4 cup of semisweet chocolate chips or 1 bar of semisweet Bakers chocolate
- 2 tbsp. packed brown sugar
Directions:
- Preheat oven to 325 degrees.
- Line a baking sheet with parchment paper or just spray it with cooking spray.
- Whisk together coconut oil, honey and brown sugar. In a separate bowl, combine 1/2-3/4 cup of semisweet chocolate chips or 1 bar of Bakers semisweet chocolate, a splash of milk and melt in the microwave until soft. Set aside.
- Add oats to the honey mixture and fold in melted chocolate, leaving some in aside for drizzling.
- Pour the mixture onto the prepared baking sheet and spread out evenly. Drizzle remaining chocolate over oats and place into the oven.
- Bake for 8 minutes before flipping the granola and baking for another 3 – 5 minutes.
