Chocolate Chip Cookie Granola

Originally intended to be coconut granola (PBFingers original), I took the base of this recipe and transformed it into what tastes eerily similar to chocolate chip cookies. I like my granola a little crispy, so it really tastes like a crunchy cookie. Eat this alone or on top of some yogurt.


  • 1 c. old fashioned oats
  • 1 1/2 tbsp. + 1/2 tsp. coconut oil
  • 2 tbsp. honey
  • 1/2 – 3/4 cup of semisweet chocolate chips or 1 bar of semisweet Bakers chocolate
  • 2 tbsp. packed brown sugar


  1. Preheat oven to 325 degrees.
  2. Line a baking sheet with parchment paper or just spray it with cooking spray.
  3. Whisk together coconut oil, honey and brown sugar. In a separate bowl, combine 1/2-3/4 cup of semisweet chocolate chips or 1 bar of Bakers semisweet chocolate, a splash of milk and melt in the microwave until soft. Set aside.
  4. Add oats to the honey mixture and fold in melted chocolate, leaving some in aside for drizzling.
  5. Pour the mixture onto the prepared baking sheet and spread out evenly. Drizzle remaining chocolate over oats and place into the oven.
  6. Bake for 8 minutes before flipping the granola and baking for another 3 – 5 minutes.

For a twist, toss some shredded coconut on top of the mixture before baking.
