Raspberry Chocolate Bars

When I came home for my first college holiday break, I traveled to the neighboring town to visit an old friend from high school. She had planned a holiday baking extravaganza for us and in the process, turned me on to this amazing dessert. You can make it any time of the year, but I prefer to bake it as a Christmas treat.

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 3/4 cup butter, softened
  • 1 10oz package frozen raspberries, thawed
  • 1/4 cup of orange juice
  • 1 tbsp of cornstarch
  • 3/4 cup mini semi-sweet chocolate chips
  1. Pre-heat the oven to 350 degrees.
  2. Mix the flour, sugar and butter. Press mixture into the bottom of a 13X9 inch un-greased baking pan. Bake for 15 minutes.
  3. Mix the raspberries, orange juice and cornstarch in a 1 quart sauce pan. heat to boiling, stirring constantly. Boil and stir for 1 minute and then let cool for 10 minutes.
  4. Sprinkle the chocolate chips over baked crust and spoon the raspberry mixture over the top.
  5. Bake for 20 minutes or until the raspberry mixture has set. Remove from oven and let cool. Drizzle with additional melted chocolate if desire. Cut into 2X1 inch squares and serve.
Thanks for this amazing recipe, Erica!
