This is a quick and easy cheesecake I made for Alex’s 34th birthday. Normally I’d be all for making one from scratch, but sometimes you just need a go-to recipe that can be prepared in a snap.
- 1 instant cheesecake mix
- 3/4 Heath Bar Toffee Bits, divided
- 1-2 tbsp instant coffee
- 1 pre-made pie crust
1. Prepare cheesecake as instructed on the box and mix in the instant coffee. (I recommend tasting after adding 1 tbsp to see if it has a strong enough flavor.)
3. Pour cake mixture into the prepared pie crust and spread evenly.
4. Sprinkle on the remaining Toffee Bits and leave in refrigerator for one hour before serving.
I highly recommend putting the Heath Bits away after you’ve measured them, otherwise you’ll end up eating half the bag like I did!
