- 2 garlic cloves, smashed
- 1 tsp of cumin
- 1 diced jalapeno
- olive oil, for heating the skillet
- 15-oz can of black beans
- 3/4 cup diced cucumber
- 3/4 cup halved tomatoes
- 4 chopped scallions
- squeeze of lime juice
- pinch of cilantro
- Heat the garlic, jalapeno and cumin in a skillet with olive oil over low heat for about 5 minutes. Toss the beans, tomatoes, cucumber, scallions, lime juice, and cilantro in a bowl.
- Mash the garlic mixture and add to the beans mixture. Season with salt and toss.
