Black Bean Salad

  • 2 garlic cloves, smashed 
  • 1 tsp of cumin
  • 1 diced jalapeno
  • olive oil, for heating the skillet
  • 15-oz can of black beans
  • 3/4 cup diced cucumber
  • 3/4 cup halved tomatoes
  • 4 chopped scallions
  • squeeze of lime juice
  • pinch of cilantro
  1. Heat the garlic, jalapeno and cumin in a skillet with olive oil over low heat for about 5 minutes. Toss the beans, tomatoes, cucumber, scallions, lime juice, and cilantro in a bowl.
  2. Mash the garlic mixture and add to the beans mixture. Season with salt and toss.
